Andalusian vineyards have been famous for over 3000 years. The first vineyards in Spain were planted here by the Phoenicians and since then they have been spread throughout the region covering over 40.000 hectares in Andalusia. Even in the Moorish domination the activity of vineyards was as intensive as before. The variety of wines that you will get in contact in this region is impressive, more than 70% of Andalusian vineyards are subordinated to one of the six Denominations of Origin which were monitored by their Regulatory Councils. There are different regions which are specialized in specific wine varieties. Malaga for instance is specialized in dry white wine and sweet desert wine. Huelva is known for dry and sweet white wines, Jerez is the master of fortified (sherry) wines. Cordoba is specialist in white wines, dry fortified, sherry. Sanlucar de Barrameda is known for its dry sherry. The Mediterranean climate is mild and all the microclimates subordinated to it are ideal for exceptional quality wines because the long periods of sunshine and lack of frost.

After having found out some of the basics of wine tasting, of course, especially about how to train the three senses involved in wine tasting: sight, smell, taste.

First you will look at the wine poured in glasses. If you tilt the glass and put it against light or a white surface you will get the real shades that can indicate the quality and the age of the wine. You will swirl the wine in the glass and have the first smell indicators. The prolonged contact of the wine with the oxygen helps the aromas to get to surface. The viscosity of the wine can also be detected by swirling it. A bodied wine will run back slowly from the side of the glass. After having smelled the wine from a few centimeters you should let your nose into the glass in order to inhale profoundly the real smell. The last sense that you will use in this procedure is the taste. First you have to take a sip of wine without swallowing it. You just roll it around and let your taste buds be exposed to the flavors. If you plan to taste lots of wines we suggest you to use the spittoon, otherwise because of the alcohol your senses will distort the ingenue experience. You have to aspirate now some air through the wine that you still hold in your mouth, thus the real aromas will reach your nose and you can have a complete compound tasting experience. The slurping of wine is recommended for liberating the subtle quality indicators. The last step is to be attentive at the aftertaste of the wine that you have enjoyed. If you want to go on tasting you will have to neutralize the mouth with different cheeses, good chocolate, bread or berries.
